		<description>I love to bake, but also have a supply of packet mixes on hand for when I need to make something quickly when I&#039;m tired/busy/being &quot;helped&quot; by my 5 year old. 

Some of the packet mixes are great. My son loves the Thomas cakes which come with wafer Thomas the Tank Engine character pictures. I&#039;m certainly not going to be able to make those from scratch!

That having been said, I think I will combine the cupcake recipe from the comments and your lemon curd idea with the Italian meringue. I do love lemon meringue pies, so these should be great.

I have a Company&#039;s Coming cookbook somewhere with a recipe for cookies based on packet cake mix. I also have an awesome apple and custard crumble recipe that uses a vanilla cake mix as one of the ingredients.

As for packets, I use an all in one mix in my Kitchenaid (you can use a food processor too)- 125g softened butter, 125g castor sugar, 125g SR flour (or plain flour and a heaped teaspoon of baking powder!) 2 eggs and a teaspoon of vanilla extract. Just mix it all together and add 1tbs milk to soften the mixture. Makes a dozen. For chocolate cupcakes I add some cocoa, coffee I add coffee, lemon I add lemon zest instead of vanilla etc etc etc!
