Got a new mixer last week to mix dough for our new pizza oven. Thought I would try it out on some other goodies. Being the packet mix queen, this was honestly the first thing I have ever baked from scratch (not that it was too hard) I was so pleased with the results, I made a batch of lemonade scones that were just as awesome!
I remember having a slice made from lattice biscuits as a kid, didn’t quite remember exactly what it was so went in search of a recipe. Spotted this one and thought I would give it a try. Next time I would like to try a cheesecake type filling.
Everytime I look at this picture, I try to wipe the vanilla seeds of the screen LOL
1 x 200g pkt Arnott’s Lattice biscuits
300ml milk
300ml thickened cream
4 tbs caster sugar
1tbs vanilla bean paste (I also added a splash of vanilla extract)
6 egg yolks
3 tbs cornflour
Icing sugar for dusting
Method
1. Line a square cake tin with baking paper. Put down a layer of the lattice biscuits, you might need to cut them depending on your tin size.
2. Whisk the egg yolks, cornflour and 2tbs sugar in a medium bowl until smooth.
3. Then put your milk, cream, 2tbs sugar and your vanilla paste/extract (or vanilla bean if you prefer) into a medium saucepan. Place over medium-low heat and bring just to the boil. Remove from heat.
4. Gradually whisk the hot milk mixture into the egg mixture until the custard thickens and coats the back of a wooden spoon. Return to pan. Place over medium-low heat and cook for 2-3 minutes until the custard is very thick.
5. Pour the custard over the biscuit base and smooth the surface. Arrange the remaining biscuits on top, cutting to fit. Put in fridge for 2-3 hours or until set. Cut into slices and dust with icing sugar to serve.
I’m not into shoes really. I spend for ever trying to find the right ones and wear them till they are dead and start the process over again.

In the shops today, trying on shoes. I am NOT a shoe person..in desperate need of something to replace my fav poor dead converse . I loves them shoes…they are so comfy, they don’t make them the same style anymore or I would just buy another pair the same…how boring am I.

So the phone rings, private no..Hmmm. It’s Tesltra, calling to ask why I haven’t paid my bill. Umm, if I had actually received a bill, I might have paid it! He says you must have, the first bill was sent the 14th of April, then many reminders. As I said before..I have had no bill at all from you!
Well your address is Glenbrook St is it not, you would have received them. I am like WTF..I have never even heard of that address, it is no where near where I live…..Well that is the postal address you have given us. Why would I give you an address I have never bloody heard of FFS?! It doesn’t even sounds anything remotely like my address..and give the postal address I give for all bills is the PO Box, I have no idea where you got that from.
So he fixes the address up. The account was already terminated because we only got the phone connected with them to make our broadband connection with Internode faster, the line was switched the internode over a month ago.
He goes on to say the new one is in the mail, due in 14 days or they will have to take further legal action. o.O That surely isn’t the time you give everyone else to pay their normal bills. No, but I am being generous and giving you an extension he says. But it was not my bloody fault in the first place you farked up!!
Was only with them just over a month, and after the issues with a line fault and then this. Thank god it wasn’t any longer!
Decided to rework some of my online business, which means lots of extra work to be done…on top of the work I have been doing half arsed lately. The lounge office was not going to cut it any longer. It wasn’t really helpful or productive and my chair was getting a little flat, the coffee table draws had become my filing come storage draws….I need an day time office! (lounge office will still be in operation for evening work)
Trip to the tip yesterday to dump some stray crap hanging around in our spare room..gotta love a 5 bedroom house. This room is sorta suppose to be the gym, the treadmill and weights are in here…but well..we all know they are long past getting used as regularly as they used to
The room is nice and bright during the day, but could do with some colour. At the moment the walls are lemon..noice. And the whole room is this lovely texture. I cannot understand WHY on earth someone would do that on purpose? I banged my hand on it earlier and it made me bleed! Thankfully it is only in one room, and the toilet.
Jake isn’t keen on painting it my lovely lime colour..or pink…so trying to come up with a nice, not too dark colour. And some curtains so I can open the blinds without the very close neighbours seeing in. Ohh…and maybe some nice prints
I have a small desk in here for now, while I look around for a new one. After a corner unit with some draws ( I can hear Ikea calling my name!) need space for all the laptops..and some cats of course.
First day in here today was quite productive! Hopefully that keeps up!

We never really do Mother’s Day..for me anyway. But it can be a good excuse to buy stuff you want, that you probably would have bought anyway…but with less guilt.
I got myself an awesome Mother’s day present this week, best ever! Ohhhh it’s so pretty, and soft and I can’t stop patting it. No..not an animal…

My lovely new macbook. Ok..stop looking at me like that! It is to soft..I don’t know how, it just is! And the track pad..oh it’s heaven!
